This coffee is named after the Brazilian Handroanthus tree, more commonly called "ipê" in Latin America. This tree is known for its yellow, pink, white, blue and orange colours and it inspired us to create a range of coffees representing the sensory diversity of the new high-potential terroirs and micro-regions.
We called it "Ipé Rosé" because wine is always at the back of our minds when considering a terroir. It is an excellent natural coffee that originates from the Alto Mogiana region, north of Mogiana. The coffees in this terroir offer quite an atypical profile for Brazil because they develop an acetic acidity reminiscent of the natural coffees produced elsewhere, with a winy body and a dry grape length. You might think it is halfway between a Brazilian natural and a Central American natural, just like a rosé wine which is neither white nor red! This coffee makes an astonishing filter coffee, and a rich and aromatic espresso.
Known for its sweet, round coffees, the Mogiana region is one of Brazil's oldest production areas and the main coffee producing region in Sao Paulo. Mogiana is named after the Companhia Mogiana de Estradas de Ferro railway company, founded in 1872, which crossed the mountainous region at a time when communities and farmers depended on this mode of transport. Some 2,000 kilometres were built up until 1971, and small villages grew alongside the railway.
The Alta Mogiana terroir is located to the northeast of the train line, between the state of Sao Paulo and some Minas Gerais municipalities. Its landscapes are typical of the coffee regions of Brazil, and it is here that photographs of large plateaus covered with seas of coffee trees and machines operating during harvests are usually taken. There are 450,000 hectares in total, 60,000 hectares of which are devoted exclusively to coffee production. Since 2017, Alta Mogiana has been recognised as a Protected Geographical Indication (PGI) producing fruity coffees with chocolatey notes and a caramelised sweetness, a well-balanced acidity and a persistent aftertaste.
